Chicharones Pork Rinds and Eggs

- Half bag of pork Rinds (plain) shopping list
- 4 eggs shopping list
- 1/3 cup chopped onions shopping list
- 1 can Rotel tomatoes (medium or hot, whatever your taste is) shopping list
- vegetable oil shopping list
- 1/2 cup water shopping list
- salt shopping list
- pepper shopping list
- garlic powder shopping list
How to make it
- Crack eggs in bowl and whisk
- In a large skillet, pour enough oil to lightly coat pan
- Saute onions until soft
- Add eggs and cook until scrambled
- Take half bag of pork rinds and put in skillet (can break the rinds in half if large)
- Add the can of Rotel
- Add water
- Add seasonings
- Simmer until rinds are soft
