Ingredients
  • 1 C fresh green beans (about 1/4 lb)
  • 1 C fresh wax beans (about 1/4 lb)
  • 1/4 C chopped green onions
  • 2 Tbl butter
  • 1 Tbl pine nuts, toasted
  • 2 tsp fresh or 1/2 tsp dried tarragon leaves
  • Note: to toast pine nuts, cook in a small skillet over medium high for 5 to 7 minutes until golden, stirring ocassionally

Directions
  1. Place green and yellow beans in steamer basket in medium saucepan
  2. Steam until crisp tender
  3. Empty beans from steamer basket into same saucepan when tenderand combine with remaining ingredients
  4. Cook over medium low about 1 to 2 minutes to melt butter and blend flavors, strring ocassionally
  5. 4 1/2 C servings

These are so easy and delicious. The tarragon adds a nice flavour and matches very well w/ the pinenuts. :) I love green beans with some kind of crunch (i usually add slivered almonds), so these were nice!
