This is another way of making a chicken biryani. It's a recipe I picked up a while ago ad have tweaked it over the years to suit me. I hope you will use it and adapt it to your own taste.

Ingredients
  • breast of chicken
  • 1 red onion (sliced)
  • 1 garlic clove (crushed chopped)
  • 1 bullet chillie chopped (seeds removed if u don't wnt it hot)
  • 2 tbsp olive oil
  • small tin chopped tomatoes
  • seeds from 4 cardamon pods
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp tumeric
  • 1 tbsp curry paste (mild or hot)
  • 1 tsp brown sugar
  • 1/2 cup frozen garden peas
  • 50g butter
  • 200g basmati rice
  • 1 chicken stock cube

Directions
  1. slice tne chicken into cubes about 1/4 inches thick
  2. heat the olive oil in a pan and add the chopped onion. Cook until it softens.
  3. add garlic and chillie cook briefly low heat (20 secs)
  4. add tomatoes, cumin, brown sugar, tumeric, coriander, cardamon seeds
  5. add chicken cook gently for 3 minutes
  6. add the butter let it melt ad the rice
  7. coat the rice in the butter and spices, then cover with boiling water
  8. add the stock cube bring to the boil and simmer(should be cooked in roughly 12 minues)
  9. Add the peas a couple of minutes before the end
  10. Enjoy
