My home-made Roasted Garlic Mayonnaise

- Makes 4 cups shopping list
- 2-4 cloves of roasted organic garlic shopping list
- 3 ounces egg yolks (about 3 to 4 yolks) shopping list
- 4 tablespoons white vinegar shopping list
- 2 tablespoons water shopping list
- 2 1/4 teaspoons dry mustard shopping list
- 3 cups vegetable oil shopping list
- 2 1/4 teaspoons kosher salt shopping list
- 1/2 teaspoon ground white pepper (or as needed) shopping list
- 2 tablespoons lemon juice (or as needed) shopping list
How to make it
- Whisk the yolks, vinegar, water and mustard until slightly foamy.
- Add the oil gradually in a thin stream, whisking constantly, until all the oil is incorporated and the mayonnaise is thick. Season with salt, pepper, garlic and lemon juice, as needed. Refrigerate immediately.
