Ingredients
  • 8 cloves garlic, unpeeled
  • 1/2 lb shrimp, peeled and deveined
  • 2 Tbsp olive oil
  • 1/2 cup heavy cream
  • 1/2 lb fresh linguine
  • 1/4 cup parsley, finely chopped
  • 1/2 cup grated parmesan cheese

Directions
  1. Bring large pot of water to a boil over high heat.
  2. Boil garlic 2 minutes.
  3. Add shrimp and cook 2-3 minutes until shrimp are pink and just cooked through.
  4. Drain.
  5. Peel and mince garlic.
  6. Heat oil in a heavy nonstick skillet over medium-high heat.
  7. Sauté garlic 1 minute.
  8. Add cream, reduce heat to low and simmer 3-4 minutes, until cream begins to thicken.
  9. Stir in shrimp, parsley, and parmesan.
  10. Season with salt and pepper to taste.
  11. Cook linguine in a large pot of boiling water 8-10 minutes.
  12. Drain.
  13. Transfer to a serving bowl, add sauce and toss well.

This is similiar to mine except I brine my shrimp before using. I put that under alterations.

Alterations


Brining Raw Shrimp:

Bring 1 cup water to boil. Turn off heat and add 1/8 cup of salt and 1/4 cup sugar. Stir until dissolved. Add 1 1/2 trays of ice cubes. When cold add shrimp and soak for 1/2 hour with shells on and 15-20 minutes with shells off.

Rinse under cold water.

This just adds extra depth of flavor to the dish.
