How to make it

  • Prepare the biscuit.
  • Preheat the oven at 170 C.
  • Beat the egg yolks with 50 gr. sugar until they are whitish.
  • Separately beat the egg whites with 30 gr. sugar until they are a thick meringue.
  • Take half of the meringue quantity and fold it carefully into the egg yolks mixture.
  • Sift carefully the flour over the mixture stirring smoothly.
  • Add the rest of the meringue.
  • Spread the mixture on a oblong shaped oven dish that you have covered with non-stick paper.
  • Bake for 12 minutes until it is golden yellow.
  • Take it out of the oven and let it cool.
  • Turn it upside down on a wet towel and unstick it carefully.
  • Then prepare the pastry cream.
  • Heat the milk in a pan stirring the matcha powder in.
  • Beat the egg yolks with the sugar until they become whitish and sift the flour over them stirring carefully.
  • Pour the mixture in the milk stirring constantly until it comes to a boil. When it starts boiling remove from the heat, pour the liquid in a bowl and add the butter in small pieces beating vigorously.
  • Put the cream in the refrigerator to thicken for at least 2-3 hours.
  • Brush the biscuit with the liquor.
  • Spread the cream on top and cover with the strawberry slices.
  • Sprinkle with 2 tbs of confectioners sugar and roll it like a loaf.
  • Cover with plastic wrap and keep it in the fridge until before ready to serve. You can prepare it one day ahead and garnish it the next day.
  • Brush the roll with the strawberry jam, sprinkle with the remaining sugar and garnish with some strawberry slices.
