Chicken A La Maria

- 1 cup of italian seasoned bread crumbs shopping list
- 1/2 cup of parmesan cheese shopping list
- 6 whole large chicken breasts, skinned, split and boned (12 pieces) shopping list
- 1/2 cup of sliced green onions shopping list
- 2 tbsp of butter shopping list
- 2 tbsp of flour shopping list
- 1 cup of milk shopping list
- 6 peppercorns shopping list
- 1 bay leaf shopping list
- 1 10 ounce package of frozen chopped spinach defrosted and squeezed dry shopping list
- 1 4 ounce package of ham slices, diced or leftover ham cubes cut in small dice shopping list
How to make it
- Combine bread crumbs and cheese; dip chicken breasts in crumb mixture, press lightly to coat.
- Arrange in a 13 x 9 x 2 lightly oiled baking dish.
- Set remaining crumb mixture aside.
- In sauce pan, cook butter and onion together until tender.
- Add flour and toast flour lightly.
- Off the heat, add the milk that has been heated with peppercorns & bay leaf to below scalding stage to the flour/butter/onion mixture.
- Return to stove over low heat and whisk until thick.
- Stir in spinach and ham cubes.
- Spoon sauce mixture over the chicken; sprinkle with remaining bread crumbs and cheese.
- Bake uncovered for 40 to 45 minutes in 350 degree oven.
