How to make it

  • Combine bread crumbs and cheese; dip chicken breasts in crumb mixture, press lightly to coat.
  • Arrange in a 13 x 9 x 2 lightly oiled baking dish.
  • Set remaining crumb mixture aside.
  • In sauce pan, cook butter and onion together until tender.
  • Add flour and toast flour lightly.
  • Off the heat, add the milk that has been heated with peppercorns & bay leaf to below scalding stage to the flour/butter/onion mixture.
  • Return to stove over low heat and whisk until thick.
  • Stir in spinach and ham cubes.
  • Spoon sauce mixture over the chicken; sprinkle with remaining bread crumbs and cheese.
  • Bake uncovered for 40 to 45 minutes in 350 degree oven.
