Chicken A La Maria Recipe
A favored chicken dish from Mom's kitchen. A different take on the dried beef chicken breast sour cream bake...same idea, different ingredients. Easily halved.

Ingredients
  • 1 cup of Italian seasoned bread crumbs
  • 1/2 cup of parmesan cheese
  • 6 whole large chicken breasts, skinned, split and boned (12 pieces)
  • 1/2 cup of sliced green onions
  • 2 tbsp of butter
  • 2 tbsp of flour
  • 1 cup of milk
  • 6 peppercorns
  • 1 bay leaf
  • 1 10 ounce package of frozen chopped spinach defrosted and squeezed dry
  • 1 4 ounce package of ham slices, diced or leftover ham cubes cut in small dice

Directions
  1. Combine bread crumbs and cheese; dip chicken breasts in crumb mixture, press lightly to coat.
  2. Arrange in a 13 x 9 x 2 lightly oiled baking dish.
  3. Set remaining crumb mixture aside.
  4. In sauce pan, cook butter and onion together until tender.
  5. Add flour and toast flour lightly.
  6. Off the heat, add the milk that has been heated with peppercorns & bay leaf to below scalding stage to the flour/butter/onion mixture.
  7. Return to stove over low heat and whisk until thick.
  8. Stir in spinach and ham cubes.
  9. Spoon sauce mixture over the chicken; sprinkle with remaining bread crumbs and cheese.
  10. Bake uncovered for 40 to 45 minutes in 350 degree oven.
