How to make it

  • Preheat oven to 350 F.
  • Cut 2 tbsp. butter into 1 cup flour mixed with baking powder and dash salt. Beat egg with milk, blend into flour mixture. Put into 9" baking pan. Wash and trim rhubarb, cut very fine, measure 4 cups, spread over base. Mix 1/2 cup flour, 1/2 cup sugar and 1/4 melted cup melted butter together until crumbly. Spread evenly over rhubarb mixture. Sprinkle Jello powder over top. Bake at 350 F. for 35 to 40 minutes.

    Since I used rhubarb puree, I put the jello directly into it. Let's see how this little darling turns out!

    Sounds like another healthy dessert for the kids. I use to make all sorts of good stuff with this fruit ( or veggie ). I've actually never gotten to test anything rhubarb on my grand children but I feel certain they'll enjoy it. Can't wait to try it out. Thanks for posting it. Brings back memories! :)
