Ingredients

1 cup Imperial Sugar Extra Fine Granulated Sugar or Dixie Crystals Extra Fine Granulated Sugar

1/3 cup shortening

2 egg whites

1/2 teaspoon vanilla

1/2 cup milk

1-3/4 cups sifted flour

2 teaspoons baking powder

1/2 teaspoon salt

Directions

Mixing bowl, measuring cups and spoons, sifter 9" cake pan, potholder.

Work plan:

Preheat oven to 375°F. Grease and flour 9" square cake pan. Put all ingredients in large mixer bowl and beat 2 minutes at medium speed of electric mixer. Empty batter into pan and bake 20 minutes.

Serve:

Mix 1/3 cup softened margarine, 2/3 cup Imperial Brown Sugar, 1/4 cup cream or evaporated milk and 1 cup shredded coconut. Spread on warm cake and place under broiler set on low heat. Broil till mixture bubbles and is lightly browned-5 to 10 minutes. Cut in squares.
