Avocado Toast

Over the last five weeks I’ve thrown out five avocados. How horrible is that! I feel guilty every time I have to toss the poor guys into the trash, but I just haven’t been able to think of a anything to do with them other than possibly make guacamole. Read more .. See less
Ingredients
- Avocado toast (Based on Dani’s original recipe at Messy Cookin via Projectionist) shopping list
- Makes 3 slices of delicious avocado topped bread shopping list
- 1 avocado shopping list
- 3 slices of bread (Note: I used Arnold Country White. When I’m “bad” I’m very very bad). shopping list
- red pepper flakes shopping list
- sea salt shopping list
- Freshly ground black pepper shopping list
- olive oil shopping list
How to make it
- Toast the bread. Slice the avocado in half, remove the flesh and place into a small bowl. Mash the avocado with a fork and spread onto the toasted bread.
- Sprinkle the toast with Red Pepper Flakes, salt and pepper, and drizzle lightly with olive oil.

I love avocados and know what you mean about feeling guilty when one has to be tossed. As a back up I've always enjoyed mashed avocados on toast with alfalfa sprouts. It's a treat I have enjoyed for years. It's even better with sliced tomatoes. Y...more

This was really good. I wasn't sure about the Olive Oil drizzle, but I really liked it. I used a whole wheat English muffin. I also subbed Cayenne for the flakes since I am out of them. Very quick, economical and tasty breakfast. Thanks for the recip...more
