Cheesy Flounder Fillets Recipe
I got this out of a magazine and we loved it! Has a great flavor!

Ingredients
  • 1/3 cup light mayonnaise
  • 1/3 cup cheddar cheese, shredded
  • 4 flounder fillets, 6-ounces each
  • 1 package (6.1 ounces) tomato lentil couscous mix
  • 1 box (10-ounces) frozen spinach

Directions
  1. Preheat oven at 400F.
  2. Spray a baking dish with nonstick cooking spray.
  3. Mix together the mayo and cheddar cheese.Place the fillets in the dish and fold in half. Evenly divide the mayo mixture over each and spread evenly.
  4. Bake fillets for 20 minutes or until fish flakes easily.
  5. While fish is baking, prepare couscous and spinach following package directions.
  6. Serve fillets with couscous and spinach alongside.
