this has a really good flavor and the meat is so tender...hope you enjoy

Ingredients
  • 2 small Squirrels
  • Seasoned salt
  • 2 sl Salt pork, rendered
  • 1 lg Can Pineapple chunks
  • 1 Lemon (use juice only)
  • 1/2 t Nutmeg
  • Juice from Pineapple
  • 2 c Chicken stock
  • 1 md Onion

Directions
  1. Dredge the cut up squirrels with the seasoned flour.
  2. Brown meat well in pork renderings. Set aside, saute onion and nutmeg in pan juices.
  3. Add stock and fruit juices and bring to boil.
  4. Put meat back in pan and simmer covered for two hours.
  5. Add Pineapple chuncks to pan, cover again and cook another 1/2 hour.
  6. Serve in a covered casserole with juices poured over.

Here in the 'burbs the squirrels (which tear up my garden and dig up my grass)...don't have any predators except for my husband, who is a pretty good shot w/ his pump-up bb gun and he only aims at the ones on the ground as to not hit kids or windows around here. I have to print this out for my husband. I'm willing to try anything at least once. We just won't tell the kiddo what we're having for dinner. Have you really cooked this before?
