    Looks good.

Some of the best chili I ever tasted was at a pub in Wales.

Guy at the bar said, "My wife made it."

"She must have spent some time in the U.S. Southwest."

"No, never been out of the UK.

Hi Sheba - It's not essential to use 'bird's-eye' chillies. The most common sold in the UK are 'anaheim chilli' which are a medium heat. These are ideal, as are 'jalapeños' which I really like when I can get them. Good luck with your dish.

I really looking forward to making this and have bookmarked it. Is there a substitute for birds eye chillies that I could use because I've never seen this chilli.
