How to make it

  • Using a deep heavy saucepan or non-stick frying pan (Skillet), brown the beef for around 5 minutes. Pour off any fat.
  • Add the onions, garlic, chilli, cumin, oregano and chilli flakes, then cook for around 5 minutes over a low heat till the onions are tender.
  • Stir in the tomatoes, kidney, black or navy beans; bring to the boil, reduce heat, then simmer or 20 minutes.
  • Add corn and cook until all appears heated through.
  • Garnish each serving with cilantro to complete.
  • Will feed six Slim Jims or 4 normal hungry people.
  • Serve with long grain rice, crusty French loaf or corn bread

    Looks good.

Some of the best chili I ever tasted was at a pub in Wales.

Guy at the bar said, "My wife made it."

"She must have spent some time in the U.S. Southwest."

"No, never been out of the UK.

Hi Sheba - It's not essential to use 'bird's-eye' chillies. The most common sold in the UK are 'anaheim chilli' which are a medium heat. These are ideal, as are 'jalapeños' which I really like when I can get them. Good luck with your dish.

I really looking forward to making this and have bookmarked it. Is there a substitute for birds eye chillies that I could use because I've never seen this chilli.
