This is not really Moussaka but is certainly based on that fine Greek dish, with similar flavors. It's an easy one dish dinner casserole.

Ingredients
  • 2 14.5 Ounce Cans Cut Green Beans, well drained
  • 1 1/2 Pounds Lean Ground Beef
  • 1/4 cup wine (any kind)
  • 1 8 Ounce Can Tomato Sauce
  • 3 cloves Garlic, minced
  • 1 medium onion diced finely
  • 1/2 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon salt
  • 2 Whole Eggs, slightly beaten
  • 1/4 Cup Parmesan Cheese, grated
  • 1 1/2 Cups Cottage Cheese
  • 2 Tablespoons Sliced Pitted Ripe Olives, optional

Directions
  1. Drain Green Beans well and place in a 1 1/2- 2 quart casserole.
  2. In a large skillet, brown ground beef until crumbly and drain off excess fat, if any.
  3. Deglaze pan with wine and add tomato sauce, garlic, onion, salt and cinnamon to the beef and wine and simmer for about 8 minutes or until onion is clear. Add small amount of water if necessary. This mix should be just slightly saucy.
  4. Spread beef mixture evenly over green beans.
  5. In a separate bowl, mix together the cottage cheese, parmesan cheese and eggs.
  6. Pour the egg mixture over the top of the casserole.
  7. Bake at 350 degree oven for about 30 minutes.
  8. Casserole may have to be baked 5-10 miniutes longer as the topping should be firm enough to cut into serving pieces.
  9. Let it cool a little and garnish with olive slices, if desired.

My daughter discovered this recipe when she was about 11. She asked me to make it for her and her friends and I did. It became one of her favorite foods. It's amazing how that cottage cheese mixture makes such a nice topping.

About my etouffee...thanks for the comments...it is a really good recipe, and I only use a roux in gumbo! The tomato just give it a slight difference in flavor and also gives it a good color...
