YAM SLICES BAKED WITH GARLIC AND ROSEMARY
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Viler Estate in Georgetown, Texas in 1991.

Ingredients
- 4-1/2 pounds yams sliced
- 1/2 cup olive oil
- 1-1/8 tablespoon rosemary crumbled
- 20 cloves garlic flattened
- 1/2 teaspoon salt
- 1 teaspoon freshly ground black pepper
Directions
- Preheat oven to 450.
- Divide first 4 ingredients among two large baking dishes then stir to coat yams.
- Season with salt and pepper then bake for 50 minutes stirring occasionally.
- Discard garlic before serving.
