My favorite strawberry cake, I don't use any nuts as I think it takes away from the flavor of this great cake. It's very moist with a great frosting. Sometimes I bake it in two sqare pans instead of 1, 9 x 13 pan.

Ingredients
- 4 eggs
- 1 cup sugar
- 1 stick butter melted
- 1 tsp vanilla or strawberry extract
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups sliced fresh strawberries
- 3/4 cup chopped nuts ( optional )
- Strawberry frosting:
- 3 tbs butter softened
- 4 oz cream cheese
- 3 to 3 1/2 cups powder sugar
- 1 cup mashed fresh strawberries
Directions
- Beat eggs with sugar until light and fluffy beat in butter and vanilla until well mixed.
- Combine dry ingredients and add to creamed mixture and beat for 2 minutes.
- Blend in berries and fold in nuts if using.
- Pour into a greased and floured 9 x 13 pan.
- Bake in a preheated 350F oven about 30 minutes or tested done.
- Cool completely.
- For frosting: combine butter and cream cheese and beat smooth.
- Add 3 cups of powder sugar to make a frosting.
- Stir in berries. add more powder sugar to get frosting consistency.
- Spread over cooled cake
- Chill until firm.
