potato cupcakes

baked puffy mashed potato cupcakes
Ingredients
- 5 potatoes shopping list
- 3 eggs (beaten) shopping list
- 1 tablespoon chicken fat (substitute melted butter) shopping list
- salt and pepper (to taste) shopping list
How to make it
- peel, boil and mash potatoes, cool
- add eggs, fat, salt and pepper
- fill greased muffin tins 3/4 full
- bake at 350 degrees F. about 45 minutes. cupcakes should be soft and fluffy
