Bourbon Brined Chicken Recipe
Wonderful chicken breasts marinated in a sweet bourbon marinade. This recipe is from Sandra Lee grilling book.

  • 1c bourbon
  • 2Tbs. salt
  • 2Tbs. packed brown sugar
  • 2Tbs. mulling spices
  • 1c orange juice
  • 2tsp crushed garlic
  • 4 boneless,skinless chicken breast halves

Directions
  1. Marinade
  2. In a small saucepan, combine bourbon,salt,brown sugar and mulling spices. Bring to a boil;reduce heat. Simmer,stirring frequently till salt and sugar are dissolved. Stir in orange juice and garlic. Cool to room temperature.
  3. Rinse chicken under cold water,pat drywith paper towels. Place in a large zip-top bag. Pour marinade into bag. Squeeze air ou;seal. Gently massage bag to combine. Marinate for 2-3 hours.
  4. Set up grill for direct grilling over med-high heat. Oil grate when ready to start cooking. Let chicken stand at room temp. for 30 mins. Remove chicken from marinade;discard marinade. Place chicken on hot,oiled grill and cook 5-6 mins per side or till chicken is no longer pink and juices run clear.
  5. This can also be broiled 6-8" from the heat for 5-6 mins a side.
