roasted roots with sausage and chicken

- 4 medium red potatoes shopping list
- 1 lb. parsnips shopping list
- 1 head broccoli shopping list
- 2 medium onions shopping list
- 1 red pepper shopping list
- 4 small zucchini shopping list
- 3 fat garlic cloves shopping list
- 4 skinless, boneless chicken thighs shopping list
- 2 hot Italian sausages shopping list
- 2 mild Italian sausages shopping list
- 1/4 cup olive oil shopping list
- 1/4 cup soy sauce shopping list
- chopped flat leaf parsley shopping list
How to make it
- scrub potatoes, peel parsnips, cut both into large bite sized pieces, put potatoes and parsnips to boil for 10 minutes, strain
- pare broccoli into florettes, peel stem and cut into bite sized pieces
- peel and cut onions into bite size pieces
- remove seeds and white membranes from red pepper and cut into bite sized pieces
- cut zucchini into bite sized rounds
- peel and mash garlic
- add all of vegetables together in large mixing bowl and add olive oil and salt and pepper, mix well
- cut chicken thighs into bite sized pieces and marinate in soy sauce for 15 min
- cut sausages into bite sized pieces
- add meats to vegetables and mix together
- line a half sheet pan with aluminum foil, oil well with olive oil
- pour vegetables and meat mixture onto pan, bake at 400 degrees F. for one hour stirring every 20 minutes so all browns evenly
- serve garnished with chopped parsley
