This is a wonderful, quick coffee cake using cranberry sauce and Bisquick. But no one would every know you didn't slave over it!!

Ingredients
  • 2 cups biscuit/baking mix (Bisquick, for example)
  • 2 tbsp. sugar
  • 2/3 cup milk
  • 1 egg, lightly beaten
  • 2/3 cup jellied cranberry sauce
  • Topping:
  • 1/2 cup chopped walnuts
  • 1/2 cup packed brown sugar
  • 1/2 tsp. ground cinnamon
  • Glaze:
  • 1 cup confectioners' sugar
  • 2 tbsp. milk
  • 1/4 tsp. vanilla extract

Directions
  1. Preheat oven to 400 F.
  2. In a large bowl, combine the biscuit mix, sugar, milk and egg. Pour into a greased 8 " square baking dish. Drop cranberry sauce by teaspoonfuls over batter.
  3. Combine topping ingredients; sprinkle over cranberry sauze. Bake at 400 for 18 to 23 minutes or until a toothpick inserted near the centre comes out clean. Cool on a wire rack.
  4. In a small bowl, combine the glaze ingredients; drizzle over the cake.

I have got to quit looking at your recipes. This looks wonderful and unlike my own recipe for a cranberry coffeecake, you don't have to wait until the holidays for fresh cranberries.

Can you use crushed cranberries in the can instead of jellied? I love cranberries, but I'm not real fond of cranberry jelly.
