If you're looking for a comfort stew, this is it. My Mum often prepare this stew for us when we were living in Ireland and still does. It's great with a crusty loaf of bread.

Ingredients
  • 2-1/2 to 3 pounds of cubed beef
  • 2 Tbsp. all-purpose flour seasoned with salt, pepper, onion and garlic powder to taste
  • 2 Tbsp. of fat for frying
  • 2 large onions, chopped
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 1 bay leaf (optional as I find it is overwhelming)
  • 1 can of Guinness
  • 2 cups beef broth
  • 1 cup water
  • Parsley for garnish

Directions
  1. Toss beef in a zip lock bag with seasoned flour.
  2. Brown in a Dutch oven with fat.
  3. Remove the beef and saute the onions gently until they are transparent.
  4. Return the beef to the pot and add carrots, potatoes and liquid.
  5. Bring to a boil, reduce heat to a gentle simmer.
  6. Cover and cook for approximately 3 hours, adding more liquid when necessary.
  7. Place in soup bowls and garnish with freshly chopped parsley.
