Ingredients

How to make it

  • Cube chicken into 1 inch pieces
  • In a medium bowl combine oil, oregano, thyme, lemon peel, lemon juice, salt and pepper.
  • Add chicken to bowl and toss to coat.
  • In a large bowl combine asparagus, beans, artichoke hearts, cherry tomatoes and parsley. Toss to mix.
  • Tear 4 squares of parchment paper. Place 1/4 of the vegetable mixture in the center of each piece of parchement and to each with 1/4 of the chicken mixture. Crimp and fold edges to close and twist ends. (I have a problem with this step so I just fold it and staple it closed. What can I say... It works!)
  • Place 2 packets on each of two baking sheets and bake at 350 degrees for 25 minutes. Serve immediately.
  • Enjoy!
