Ingredients
  • 1 lb skinless, boneless chicken breast
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh oregano, or 1 teaspoon dried
  • 1 tablespoon chopped fresh thyme, or 1/2 teaspoon dried
  • zest from 1 lemon
  • juice from 1 lemon
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 1 lb fresh green beans, (just as good with frozen)
  • 1 lb asparagus, cut into 2 inch pieces
  • 1 can quartered artichoke hearts drained
  • 1 cup of cherry tomatoes, cut in half
  • 2 tablespoons fresh Italian parsley, chopped
  • Parchment paper

Directions
  1. Cube chicken into 1 inch pieces
  2. In a medium bowl combine oil, oregano, thyme, lemon peel, lemon juice, salt and pepper.
  3. Add chicken to bowl and toss to coat.
  4. In a large bowl combine asparagus, beans, artichoke hearts, cherry tomatoes and parsley. Toss to mix.
  5. Tear 4 squares of parchment paper. Place 1/4 of the vegetable mixture in the center of each piece of parchement and to each with 1/4 of the chicken mixture. Crimp and fold edges to close and twist ends. (I have a problem with this step so I just fold it and staple it closed. What can I say... It works!)
  6. Place 2 packets on each of two baking sheets and bake at 350 degrees for 25 minutes. Serve immediately.
  7. Enjoy!
