Chicken And Vegetables In Paper

- 1 lb skinless, boneless chicken breast shopping list
- 2 tablespoons olive oil shopping list
- 1 tablespoon chopped fresh oregano, or 1 teaspoon dried shopping list
- 1 tablespoon chopped fresh thyme, or 1/2 teaspoon dried shopping list
- zest from 1 lemon shopping list
- juice from 1 lemon shopping list
- 1/2 teaspoon salt shopping list
- black pepper to taste shopping list
- 1 lb fresh green beans, (just as good with frozen) shopping list
- 1 lb asparagus, cut into 2 inch pieces shopping list
- 1 can quartered artichoke hearts drained shopping list
- 1 cup of cherry tomatoes, cut in half shopping list
- 2 tablespoons fresh Italian parsley, chopped shopping list

How to make it
- Cube chicken into 1 inch pieces
- In a medium bowl combine oil, oregano, thyme, lemon peel, lemon juice, salt and pepper.
- Add chicken to bowl and toss to coat.
- In a large bowl combine asparagus, beans, artichoke hearts, cherry tomatoes and parsley. Toss to mix.
- Tear 4 squares of parchment paper. Place 1/4 of the vegetable mixture in the center of each piece of parchement and to each with 1/4 of the chicken mixture. Crimp and fold edges to close and twist ends. (I have a problem with this step so I just fold it and staple it closed. What can I say... It works!)
- Place 2 packets on each of two baking sheets and bake at 350 degrees for 25 minutes. Serve immediately.
