The New And Improved Cowboy Cookie

- 2 cups old-fashioned rolled oats shopping list
- 2 cups flour shopping list
- 3/4 tsp baking soda shopping list
- 3/4 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1/2-3/4 tsp cinnamon shopping list
- 1 cup (2 sticks) unsweetened butter, softened shopping list
- 1 cup light brown sugar shopping list
- 2/3 cup white sugar shopping list
- 2 room temperature eggs shopping list
- 1 tsp vanilla shopping list
- 2 cups milk chocolate chips shopping list
- 1 cup shredded coconut shopping list
- 1 cup chopped nuts (optional) shopping list
How to make it
- In a large bowl stir together the oats, flour, baking soda, baking powder, salt, and cinnamon.
- Preheat oven to 350°.
- In the bowl of your mixer blend the butter and sugars until smooth, (about 2 minutes). Add the eggs and continue to beat until fluffy, about 1 1/2 minutes. Blend in vanilla.
- Gradually add the flour mix to the butter mix, alternating with chocolate chips and coconut.
- Chill dough for about an hour. Line baking sheet with parchment.
- Drop dough by tablespoon fulls onto baking sheet about 2 inches apart, and bake for 10-12 minutes until lightly browned on edges (my oven takes 11 minutes).
- Let cookie sit on baking sheet for a minute to set up, then remove to wire rack to cool.
