The New And Improved Cowboy Cookie Recipe
This cookie tastes just like the "famous" magic cookie bar, and it's pretty close to addicting!

Ingredients
  • 2 cups old-fashioned rolled oats
  • 2 cups flour
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2-3/4 tsp cinnamon
  • 1 cup (2 sticks) unsweetened butter, softened
  • 1 cup light brown sugar
  • 2/3 cup white sugar
  • 2 room temperature eggs
  • 1 tsp vanilla
  • 2 cups milk chocolate chips
  • 1 cup shredded coconut
  • 1 cup chopped nuts (optional)

Directions
  1. In a large bowl stir together the oats, flour, baking soda, baking powder, salt, and cinnamon.
  2. Preheat oven to 350°.
  3. In the bowl of your mixer blend the butter and sugars until smooth, (about 2 minutes). Add the eggs and continue to beat until fluffy, about 1 1/2 minutes. Blend in vanilla.
  4. Gradually add the flour mix to the butter mix, alternating with chocolate chips and coconut.
  5. Chill dough for about an hour. Line baking sheet with parchment.
  6. Drop dough by tablespoon fulls onto baking sheet about 2 inches apart, and bake for 10-12 minutes until lightly browned on edges (my oven takes 11 minutes).
  7. Let cookie sit on baking sheet for a minute to set up, then remove to wire rack to cool.

I am a sucker for good cookies and these look fab!!!


OK, I tried the alteration feature which did not help. Anybody know the baking temperature? I'm guessing at 375.... Stupid mistake to not include such basic info in a baking recipe.
