How to make it

  • Place water, rice and salt in saucepan.
  • Bring to a boil, then reduce heat and let simmer for 40 minutes.
  • Then add in remaining ingredients except cinnamon and continue to simmer on low heat for 20 minutes.
  • Serve hot, sprinkle with cinnamon. Very very simple!

I love rice pudding, made this way or that way or any way, i just plain love the stuff. It makes a great dessert served hot or cold. But when I want it NOW..... and don't want to wait I make this kind, it comfort food at it's best! I like it a tad saucy or creamier, with a custard like pudding surrounding each kernel of rice....... When I want it now, I use instant rice, when I am patient I prefer basmati rice as it don't care for the rice typically sold in grocery stores, the long grain type. It's one of those recipes that you can wing it easily enough without using exact measurements. I'm cooking some right now but increased the rice to 2 cups uncooked instant. But i'll add a bit of extra milk to make it a bit more creamy. I dislike raisins so I won't be adding them at all, and a bit more vanilla than the recipe calls for just because I like a stronger vanilla flavor. Now how to keep from eating the whole batch myself over the next few days.... Yeah rice pudding is THAT good!
