Apricot Bars

- 1/3 cup dried apricots, chopped shopping list
- 1 1/2 sticks butter, unsalted shopping list
- 2 tbls. honey shopping list
- 2 cups Rice Krispies shopping list
- 1 cup almonds, chopped shopping list
- 1 egg shopping list
- 1 egg yolk shopping list
- 2/3 cup flour shopping list
- 3/4 cup apricot preserves shopping list
- 1 tbls. lemon juice shopping list
How to make it
- Preheat oven to 350
- Spray 11x7 baking pan with cooking spray
- Put apricots in a saucepan with butter and honey over low heat until butter melts
- Put Rice Krispies in food processor and process until fine crumbs.
- Mix cereal crumbs in a bowl with almonds, egg, egg yolk and flour
- In large bowl, mix cereal mixture and honey mixture
- Put half in baking pan and press down with a spoon until compact
- In small bowl, mix preserves and lemon juice
- Spread it on top of cereal mixture in pan
- Press remaining cereal mixture on top of preserves
- Bake for 30 minutes or until the top is golden brown
- Cool and cut into 2 in. squares.

Mmmm I know these have got to be good. My mama loved apricots too! Especially apricot nectar. So refreshing.

Wow, Wynne, I'm trying to imagine just how these would taste! Sweet, salty, fruity, tart....And, versatile -- I bet you could substitute dried cranberries (Craisins) or other dried fruits, and preserves to match the fruit!
