How to make it

  • Preheat oven to 350
  • Spray 11x7 baking pan with cooking spray
  • Put apricots in a saucepan with butter and honey over low heat until butter melts
  • Put Rice Krispies in food processor and process until fine crumbs.
  • Mix cereal crumbs in a bowl with almonds, egg, egg yolk and flour
  • In large bowl, mix cereal mixture and honey mixture
  • Put half in baking pan and press down with a spoon until compact
  • In small bowl, mix preserves and lemon juice
  • Spread it on top of cereal mixture in pan
  • Press remaining cereal mixture on top of preserves
  • Bake for 30 minutes or until the top is golden brown
  • Cool and cut into 2 in. squares.

    Wow, Wynne, I'm trying to imagine just how these would taste! Sweet, salty, fruity, tart....And, versatile -- I bet you could substitute dried cranberries (Craisins) or other dried fruits, and preserves to match the fruit!
