easy to make, and not costly made everywhere in morocco. served as side dish with almost every meal . very fresh , and common in summer. can also be enjoyed with grills.

  • 500 grams(1lb) cauliflower
  • 1/2 a bunch of parsley finely chopped
  • 3 garlic cloves
  • 2tbsp alcohol vinegar
  • 4-5tbsp olive oil (or more to taste)
  • salt, cumin, paprika.

Directions
  1. Préparation
  2. wash and cut cauliflower. do not cut into very small pieces , you don't want to have bits of caulifower,.
  3. place cauliflowers with the garlic cloves. in boiling water .cook covered in a pan for 10minutes.
  4. smash the garlic in a container, add cumin, salt, paprika, finely chopped parsley, olive oil and vinegar.
  5. mix delicately together .

Just had this with our dinner. My husband couldn't stop eating it. Says it is the best way he has ever had cauliflower! This is a winner.


Is alcohol vinegar, Apple Cider Vinegar and the parsley is regular, flat leaved parsley and not Cilantro right? I plan on making this with the Kofta meatball, my habibi is asking for the meatballs LOL..and I want to make sure i'm using the right ingredients.. Shukran :)

no, olive oil is what we use for it typically moroccan way. besides olive oil is healthy, butter's bad:)
