Ingredients

3 cups all-purpose flour

1 tsp. baking soda

1/2 tsp. salt

2 cups sugar

1 tsp. ground cinnamon

3 eggs, beaten

3/4 cup vegetable oil

1 1/2 tsp. vanilla extract

1 (8oz.) can of crushed pineapple, undrained

1 3/4 cups mashed bananas

1 cup chopped pecans

1/2 cup chopped pecans

Directions

Preheat oven to 350 degrees

Combine the first five ingredients in a large bowl.

Add oil and eggs and stir until all dry ingredients are moistened. (DO NOT BEAT, a wooden spoon is best)

Stir in vanilla, pineapple, bananas, and 1 cup pecans.

Pour batter into a tube pan that is greased and floured.

Bake at 350 for 1hr and 20min or until the toothpick comes out clean.

Cool in pan for 10 min and then remove from pan and let cool completely before frosting.

Use remaining chopped pecans for decoration.
