This is a nice spicy tasting recipe we have this with grilled herbed corn, chimichurri sauce, grilled fruit and beer. Texas toast.

Ingredients
  • 1-1/2 lb. skirt steak, flank steak can be substituted
  • MARINATE STEAK IN:
  • 3 Tbsp. olive oil
  • 3 Tbsp. fresh lime juice
  • 2 Tbsp. brown sugar
  • 1/2 tsp. crushed red pepper flakes
  • 3 cloves garlic crushed

Directions
  1. Trim off as much fat as possible from both sides of skirt steak. Some of it is loosely attached and can be removed by hand. Otherwise, use a knife on places where it's firmly attached.
  2. Trim as much silverskin as you can.
  3. Marinate steak in olive oil, lime juice, brown sugar, crushed red pepper flakes and garlic for 30 minutes.
  4. Preheat the grill, when hot remove steak from marinate and season with slat and pepper.
  5. Place steak on grill. cover and cook until seared, about 3 minutes.
  6. Flip steak over cook another 3 minutes.
  7. Transfer meat to a cutting board, tent with foil and let steak rest 8 minutes before slicing thin.
