Asparagus With Shrimp

- 1 Kg green asparagus shopping list
- 10 g butter (or more) shopping list
- 10 g sugar shopping list
- 500 g potatoes shopping list
- 50 g lobster-paste shopping list
- 1/8 L milk shopping list
- 1/4 L cream shopping list
- 2 TSP corn starch or potato starch shopping list
- pepper, salt shopping list
- 1/2 TBSP lemon juice shopping list
- 200 g shrimp shopping list
- 1 TBSP fresh chopped dill shopping list
- i like to use the green asparagus for this recipe, looks more colorful then with the normally served white asparagus ('normally' meaning here, in Germany) shopping list
How to make it
- Cut off bottom part of green asparagus and peel only about the last third.
- in high 'asparagus pot' (i like to use this because then the tops do not get too soft) bring salted water to a boil and add about 10 g of butter (one generous pat)
- cook asparagus for about 15 minutes on medium heat
- cook potatoes in their jackets
- heat milk-cream-mixture, add lobster-paste dissolved in about one TBSP of hot water, add to mil-cream-mixture.
- thicken with corn-starch dissolved in some cold water
- season with white pepper and salt and a dash of lemon juice
- add fresh deveined shrimp
- peel potatoes,
- heat frying pan with some butter, toss in potatoes, season with a little white pepper and fleur de sel,
- put potatoes on plate, some green asparagus, ladle some shrimp with sauce onto asparagus, sprinkle with chopped dill.
