variation
Broccoli Italiano Falso
1 cup broccoli florettes (4-6 oz.)
1 tablespoon oive oil
1/2 or more clove garlic
1 tablespoon grated parmigiano
red pepper flakes (optional)
salt and pepper
Cut up broccoli in florettes, place in covered microwave dish with a tablespoon of water. Smash or mince garlic and add to broccoli along with olive oil and pepper flakes (op.). Cover, microwave until ALMOST done (2 1/2 minutes on high more or less). Grate parmigiano (or open container) while broccoli cooks. Add parmigiano and stir around a little, cover, microwave 30 seconds more and serve. Salt and pepper to taste
Additional tips
Of course, you can vary the amount of garlic according to your taste. The cooking times will vary since each microwave oven is different. You might have to check the broccoli for doneness and cook it more or less than my suggestion. The last step with cheese should only last 30 seconds, any longer and the sauce may turn funny.
You can let the broccoli sit 5 minutes before the cheese goes in, but after the cheese step it should be served immediately.
You can increase the ingredients to serve 2, 4, 6. The initial cooking time for the broccoli will need to increase to 3, 3 1/2, 4 minutes, but again, after the cheese goes in check at 30 seconds, it may need an additional 15 seconds or so. I tried the do this for 10 and it didn't work out very well, I just couldn't get that much broccoli to steam.
You can use this recipe with brussels sprouts cut in half (the garlic and olive oil is wonderful) or cauliflower.
