How to make it

  • Preheat oven to 350 degrees F.
  • Grease and flour a 9 X 13 inch cake pan
  • In the bowl of an electric mixer, cream the butter and sugar at medium speed about 2 minutes
  • With the mixer on low speed, add vanilla, eggs and peanut butter and mix until blended
  • In a medium bowl, whisk together the flour, baking soda and salt
  • With the mixer on low speed, slowly add the flour mixture and mix until just combined
  • Mixture will be fairly dry
  • Spread approximately 2/3 of the dough into the prepared pan and press evenly into the bottom
  • Spread the jam evenly over the dough
  • Sprinkle the peanuts evenly over the jam
  • With fingers, crumble the remaining dough evenly over the jam
  • Bake at 45 minutes or until golden brown
  • Cool completely before cutting into squares
