Peanut Butter And Jelly Bars

- 2 sticks butter, at room temperature shopping list
- 1-1/2 cups sugar shopping list
- 1 tsp. vanilla shopping list
- 2 eggs, at room temperature shopping list
- 2 cups peanut butter (creamy or chunky) shopping list
- 3 cups flour shopping list
- 1 tsp. baking powder shopping list
- 1 18-oz jar jam, jelly or preserves, any flavor shopping list
- 2/3 cups peanuts chopped (salted or unsalted) shopping list
How to make it
- Preheat oven to 350 degrees F.
- Grease and flour a 9 X 13 inch cake pan
- In the bowl of an electric mixer, cream the butter and sugar at medium speed about 2 minutes
- With the mixer on low speed, add vanilla, eggs and peanut butter and mix until blended
- In a medium bowl, whisk together the flour, baking soda and salt
- With the mixer on low speed, slowly add the flour mixture and mix until just combined
- Mixture will be fairly dry
- Spread approximately 2/3 of the dough into the prepared pan and press evenly into the bottom
- Spread the jam evenly over the dough
- Sprinkle the peanuts evenly over the jam
- With fingers, crumble the remaining dough evenly over the jam
- Bake at 45 minutes or until golden brown
- Cool completely before cutting into squares
