This is from Patti's in Grand Rivers, KY. Her pies usually have a foot of meringue on top...this one doesn't

Ingredients
  • 7 egg whites, unbeaten
  • 1-1/2 cups granulated sugar
  • 1-1/2 cups graham cracker crumbs
  • 1-1/2 cups pecan pieces
  • 1-1/2 cups coconut
  • 9-inch unbaked pie shell

Directions
  1. Mix all ingredients together and stir by hand.
  2. Pour into unbaked pie shell.
  3. Bake in preheated 325 deg. oven until glossy and set; about 25 to 30 minutes.
  4. Do not overbake.
  5. Serve warm with sliced bananas or other fruit and whipped cream.
