How to make it

  • Brush chicken with a mixture of the oil, lime juice, and honey. Roll the breasts in the crushed tortilla chips to coat. Place in a baking dish. Bake at 350 degrees for about 25 minutes. Puree tomatoes and cilantro. Remove chicken from oven and pour on the puree; top with the grated cheese. Return to the oven til the cheese melts and chicken juices run clear. Garnish with cilantro and lime wedges, if desired.
