Bubbys Hot Potato Salad

- 8 medium size (White Rose or Red) potatoes, NOT russet potatoes ! shopping list
- 6 eggs shopping list
- 1 bunch green onions, tops and all, diced shopping list
- 2 cups cheddar cheese, grated (use Cheddar Do NOT substitute) ! shopping list
- 2 cups "MIRACLE WHIP" salad dressing, YES , I said Miracle Whip!! shopping list
- This is THE ingredient that sets this recipe "apart" from other recipes!! shopping list
- salt to taste shopping list
How to make it
- Boil potatoes, whole, with 'skins' on, till 'fork-tender' about 20 minutes
- Drain water off potatoes, when cool enough to handle, peel and
- cut into chunks
- Boil eggs, peel and GRATE on cheese grater
- Dice green onions
- Grate Cheddar Cheese
- In bowl gently fold ALL ingredients into the Miracle Whip
- You still want to have the potatoes in chunks, NOT mushy!
- Put into 2 quart casserole dish, either buttered or use PAM spray
- Just "heat through" in a 325 degree oven, about 20 to 25 minutes
- You do not want it to 'boil'
- Before baking, for "Extra" flavor, sprinkle more grated cheese over top!!!
