Ingredients

8 medium size (White Rose or Red) Potatoes, NOT Russet potatoes !

6 Eggs

1 bunch green onions, tops and all, diced

2 cups Cheddar Cheese, grated (use Cheddar Do NOT substitute) !

2 cups "MIRACLE WHIP" Salad Dressing, YES , I said Miracle Whip!!

This is THE ingredient that sets this recipe "apart" from other recipes!!

Salt to taste

Directions

Boil potatoes, whole, with 'skins' on, till 'fork-tender' about 20 minutes

Drain water off potatoes, when cool enough to handle, peel and

cut into chunks

Boil eggs, peel and GRATE on cheese grater

Dice green onions

Grate Cheddar Cheese

In bowl gently fold ALL ingredients into the Miracle Whip

You still want to have the potatoes in chunks, NOT mushy!

Put into 2 quart casserole dish, either buttered or use PAM spray

Just "heat through" in a 325 degree oven, about 20 to 25 minutes

You do not want it to 'boil'

Before baking, for "Extra" flavor, sprinkle more grated cheese over top!!!
