Desperation Fajitas

- Marinade: shopping list
- 1/3 cup minced fresh cilantro shopping list
- 1/3 cup fresh lime juice shopping list
- 1/4 cup of dry sherry shopping list
- 1/4 cup of mild oil shopping list
- 4 teaspoons dried oregano shopping list
- 1 tablespoon ground cumin shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon black pepper shopping list
- 1/4 teaspoon crushed red pepper shopping list
- 5 garlic cloves, minced shopping list
- Fajita fixin's: shopping list
- 1 to 1 1/2 lb. piece of top loin, cut into strips, trimmed of all fat shopping list
- 1 large red onion, cut vertically to separate into strips (mimic the shape of the other veggies) shopping list
- cooking spray or scant tbsp of mild vegetable oil shopping list
- 1 cup red bell pepper strips shopping list
- 1 cup julienne-cut yellow squash shopping list
- 1 cup julienne-cut zucchini shopping list
- 6 (10-inch) flour tortillas shopping list
- 2 cups chopped tomato (concasse~peeled, seeded, diced) shopping list
- 2 tablespoons reduced fat sour cream shopping list
- Chopped fresh cilantro for garnish shopping list
How to make it
- Prepare the marinade by combining cilantro lime juice, sherry, oil, oregano, cumin, fresh garlic, salt and peppers.
- Whisk well..
- Combine the prepped marinade, slivered red onion pieces, and steak in a large zip-top plastic bag; seal.
- Marinate in refrigerator for at least one hour, up to overnight turning occasionally.
- Remove steak and onion mixture from bag; discard marinade.
- Place a large nonstick skillet coated with cooking spray over medium-high heat until hot.
- *I use my wok or my largest cast iron skillet, depending on how much I'm preparing*
- Add the steak mixture, and stir-fry 5 minutes for med rare.
- Place the steak mixture in a large bowl, and keep warm with a foil tent.
- Add bell pepper, squash, zucchini, with a splash of oil to skillet; stir-fry another 5 minutes or until vegetables are crisp-tender.
- Add to steak mixture; toss gently.
- Warm tortillas according to package directions.
- Fill tortillas with hot beef/veggie mix.
- Top with chopped tomatoes and a spoonful of sour cream.
- Add cilantro if desired.
