Spanish Fiesta

- 2 or 3 tsp chopped jalapeno peppers (more if you like more zing) shopping list
- 1 medium onion, chopped shopping list
- 2 TBSP vegetable oil shopping list
- 1 4oz can chopped green chillies shopping list
- 2 fresh tomatoes, chopped shopping list
- 1 10oz package chopped frozen broccoli shopping list
- 1 1/2 TBSP red wine vinegar shopping list
- 1 8oz package cream cheese softened shopping list
- 2 1/2 cups grated monterey jack cheese shopping list
- 1 cup half and half shopping list
- salt and pepper to taste shopping list
- paprika (optional) shopping list
How to make it
- Place oil in frying pan and heat.
- Add peppers, onions, chilies and tomatoes.
- Saute until onions are tender.
- Remove from burner. In a large bowl mix softened cream cheese, half and half, grated Monterey Jack cheese, frozen broccoli, vinegar, and salt and pepper to taste.
- Mix well until there are small lumps of cream cheese.
- Add sauted vegetables.
- Pour into a greased baking dish and bake at 400F degrees about 20 minutes.
- You may sprinkle paprika on top for richer color.
- Dish will firm upon standing.
