Lemon Delicate

- 1 tbsp butter shopping list
- 1/2 cup sugar shopping list
- juice and rind of a lemon shopping list
- 2 tbsp of plain or SR flour shopping list
- 2 eggs, separated shopping list
- 1 cup milk shopping list
How to make it
- Cream butter and sugar. Mix in the flour (its fairly stiff at this stage). Add the rind and juice of the lemon. Mix well. Add the egg yolks. Beat well. Gradually stir in the milk. Beat the egg whites until stiff, then stir them into the mixture.
- Pour into a buttered dish. Stand in a baking dish of water. Bake in a moderate oven till the top has turned pale brown. Serve with cream.
