Thai Minced Chicken Recipe
Can use leftover grilled or broiled chicken. Delicious served in pita bread for lunch.

Ingredients
  • 1 lb. boneless, skinless chicken breasts
  • 1/2 teaspoon dried crushed red pepper
  • Juice of 1 lemon
  • 1 Tablespoon very cold water
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon canola oil
  • 1 scant teaspoon sugar
  • 1/4 cup finely diced onion
  • 12 cilantro leaves, chopped
  • 12 mint leaves, chopped
  • 1 head lettuce, shredded

Directions
  1. Grill/broil chicken until done. Let cool.
  2. Finely mince the cooked chicken. If using a food processor, pulse it several times until you have a fine mince; check it frequently and don't overprocess it or it will turn into a paste.
  3. Toss chicken and remaining ingredients except lettuce in mixing bowl until well blended.
  4. Mound the shredded lettuce on individual salad plates and spoon the chicken mixture on top. Serve immedialely.
  5. Calories: 132
  6. Cholesterol: 48 mg
  7. Total fat: 4 gms

I love this stuff - Larb Gai - I think is the Thai name. I get this at a local restaurant but now I can make it myself! Will be a summer favorite for sure - thanks!!

This sounds like Larb Gai, which is one of my all time favorite Thai dishes. Not all the Thai restaurants around here sell it - it's apparently quite unusual. LOVE IT!
