How to make it

  • Grill/broil chicken until done. Let cool.
  • Finely mince the cooked chicken. If using a food processor, pulse it several times until you have a fine mince; check it frequently and don't overprocess it or it will turn into a paste.
  • Toss chicken and remaining ingredients except lettuce in mixing bowl until well blended.
  • Mound the shredded lettuce on individual salad plates and spoon the chicken mixture on top. Serve immedialely.

  • Total fat: 4 gms

    This sounds like Larb Gai, which is one of my all time favorite Thai dishes. Not all the Thai restaurants around here sell it - it's apparently quite unusual. LOVE IT!

    I love this stuff - Larb Gai - I think is the Thai name. I get this at a local restaurant but now I can make it myself! Will be a summer favorite for sure - thanks!!
