Cheesy Chicken Casserole Recipe
This is a simple casserole but is rich enough to seem much more complex. This is one of the only recipes all my children love.

Ingredients
  • 4 medium-sized chicken breasts, cooked and cubed
  • (Other chicken can be substituted if you prefer dark meat, etc.)
  • 1 lb. dried pasta
  • 2 cans Cream of Chicken soup
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped almonds
  • 1 sleeve Ritz-type crackers
  • 1 stick salted butter

Directions
  1. Cook and cube chicken
  2. Cook pasta
  3. Preheat oven to 350.
  4. In a large bowl, mix all ingredients EXCEPT for crackers and butter
  5. Evenly spread mixed ingredients into a greased 9X13 pan
  6. Melt butter.
  7. Crush crackers.
  8. Mix crackers and butter and spread over top of casserole.
  9. Place casserole in oven and bake for 30-45 minutes until heated through.
  10. Serve.
  11. Variation:
  12. I use nearly double the cheese as my whole family is addicted to cheese.
