Christmas Pickles Recipe
An old recipie - fairly labor intensive, but oh, so worth it! The oil needs to be bought from the pharmacy - it is not sold over-the-counter.

Ingredients
  • 8 each large ripe cucumbers
  • 7 cups sugar
  • 1 pint white vinegar
  • 1/2 teaspoon oil of cloves
  • 1/2 teaspoon oil of cinnamon
  • 3 medium-sized jars marachino cherries with juice

Directions
  1. Peel cucumbers and remove seeds. Cut into 1 inch pieces. Cover with water and boil until tender.
  2. Drain water.
  3. Make a syrup of the sugar, vinegar, and oils. Bring the syrup to a boil and pour over the drained cucumbers. Let stand overnight.
  4. Drain (reserving liquid) and bring syrup to a boil again - pour over cucumbers and let stand for 3 hours.
  5. Then heat both syrup and cukes to a boil. Add the jars of cherries and juice once you remove the cukes from heat.
  6. Put in jars and seal in water-bath processing.

Thanks for sharing this recipe. Its very unusual. I'm curious as to what kind of flavor these pickles have once they are finished. Are these extremely sweet pickles? Do they taste like cherries? Please let me know? Thanks!


Are these oils that you use from a pharmacy ok for food consumption? I am sure they are, but I am weird about this. Can I not get them in a food store?


My mom used to make these they are very good thank you


My grandma did something similar and just added whole cloves.
