Since I can't get fresh peaches here on the island I have to use canned peaches to make peach pies. I didn't want to discard the liquid, so I made up some fab peach syrup.

Ingredients
  • Liquid from 5 cans of sliced peaches
  • 1/4 tsp cinnamon
  • 2 cups granulated sugar, plus a bit extra if needed

Directions
  1. In a large sauce pan combine the peach liquid, cinnamon and sugar.
  2. Cook over medium heat, stirring constantly until sugar has dissolved.
  3. Reduce heat when liquid mixture simmers, and cook at a low simmer, stirring occasionally until mixture thixkens.
  4. Add more sugar, if necessary, to thicken mixture to desired consistancy.
  5. Cool and store in a jar with a tight fitting or screw-on lid.
  6. Syrup will keep for up to 6 months on the shelf when sealed after each use.
  7. This has a lovely light peach aroma and flavor and can be used on pancakes, ice cream, cakes or any dessert where syrup is called for.
