Shortstop Shrimp Stack Recipe
I have had this dish a lot of times and serve them with grilled veggies, grilled garlic/dill bread and a drink it makes a good meal.

Ingredients
  • 1 lb. extra large shrimp, peeled and deveined
  • 1/4 cup evoo
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped cilantro
  • 1/2 tsp. kosher salt
  • 1 tsp. black pepper
  • 1/2 tsp. crushed red pepper flakes
  • 1 tsp. minced garlic
  • 8 bamboo skewers
  • Grilled veggies of your choice

Directions
  1. Assemble marinade in a large zip top plastic bag seal toss to mix.
  2. Marinade shrimp for 30 minutes.
  3. Soak the bamboo skewers in water for 10 minutes to prevent from burning.
  4. Spear three shrimp per skewer.
  5. Grill on outer edges of grill for about 2 minutes per side.
  6. Serve on platter with grilled veggies.
