Spinach Gnocchi
From auntybea 15 years agoIngredients
- About 8 large spinach leaves shopping list
- 8 oz. ricotta cheese shopping list
- 3 oz. parmesan cheese shopping list
- 1 egg shopping list
- 1/4 tsp. nutmeg shopping list
- 1 ½ oz. butter shopping list
- flour shopping list
- salt, pepper shopping list
How to make it
- Wash and dry spinach, remove white stalks. Cook spinach with very little boiling, in a saucepan with a tightly fitting lid, for 5 minutes. Drain well and chop finely. Combine the spinach, ricotta cheese, half the grated parmesan cheese, egg, salt, pepper and nutmeg in a bowl. Mix well.
- Form mixture into balls or egg shapes, using a tablespoon and the palm of your hand to gently mould them. Roll gnocchi lightly in flour. Bring a large pan of salted water to the boil. Drop in the gnocchi, three or four at a time.
- Simmer gently until the gnocchi rise to the surface, about 1 to 2 minutes. Remove from the pan with a slotted spoon. Arrange in a well-greated ovenproof dish.
- Melt the butter and pour over the gnocchi, sprinkle with remaining grated parmesan cheese. Place under broiler until cheese turns golden brown. Watch carefully to avoid burning! Serves 4 to 6
