Spinach Gnocchi Recipe

  • About 8 large spinach leaves
  • 8 oz. Ricotta cheese
  • 3 oz. Parmesan cheese
  • 1 egg
  • 1/4 tsp. Nutmeg
  • 1 ½ oz. Butter
  • flour
  • salt, pepper

Directions
  1. Wash and dry spinach, remove white stalks. Cook spinach with very little boiling, in a saucepan with a tightly fitting lid, for 5 minutes. Drain well and chop finely. Combine the spinach, ricotta cheese, half the grated parmesan cheese, egg, salt, pepper and nutmeg in a bowl. Mix well.
  2. Form mixture into balls or egg shapes, using a tablespoon and the palm of your hand to gently mould them. Roll gnocchi lightly in flour. Bring a large pan of salted water to the boil. Drop in the gnocchi, three or four at a time.
  3. Simmer gently until the gnocchi rise to the surface, about 1 to 2 minutes. Remove from the pan with a slotted spoon. Arrange in a well-greated ovenproof dish.
  4. Melt the butter and pour over the gnocchi, sprinkle with remaining grated parmesan cheese. Place under broiler until cheese turns golden brown. Watch carefully to avoid burning! Serves 4 to 6

Hey, Auntybea....thank you so much for this recipe! I've been craving gnocchi and haven't been able to find a recipe that didn't have wheat flour in the gnocchi itself. Since your recipe only calls for tossing the gnocchi in flour, I can substitute cornstarch and finally have some gnocchi! Many thanks.


I have never had this so I am putting it on my short list to try. Sounds delicious!
