How to make it

  • Have all ingredients at room temp. heat oven to 350. Place margarine in mixer. Sift & measrue flour & add sugar. Put flour mixture, eggs & vanilla in mixer. Mix all until moist on low speed. Mix on med. for 3-4 min.- no longer. Pour into grease & floured cake pans. " Burp" pans on counter. Bake for 30 min.
  • 7 Minute Frosting; Place all ingredients except vanilla using double boiler. Beat with a hand mixer until icing peaks ( approx. 7 minutes). Remove from heat & beat in vanilla until cool.
  • Frost one layer and top with second layer. Frost rest of cake and cover top & sides with flaked coconut.

    I JUST LOVE PASS DOWN/TRADITIONAL RECIPES.. THIS IS ALMOST LIKE MY GRANNYS RECIPE.. SHE HAD FULL FAITH IN HER 7 MIN ICING. LOL!

    My Grandma used to make the best coconut cakes too. She would just cook the coconut down with sugar and pour it on top. Then the juice would just sink into that cake....yummmmm! I only wish I had gotten the recipe from her.
