And a little cayenne pepper, a handful of chopped parsley, squeeze a little lemon juice on top to serve up and they really are terrific!

Love these! I make mine with a little Dill Weed, and for a Pacific Northwest touch, try it with a drizzle of pure Maple Syrup. (Try it..!)

Do they need a sauce of some type? What would you use?

You can put a sauce with them, whatever you like. In my family we always had them with hot biscuits and gravy made from the oil you cooked the patties in mixed with flour and milk, salt and pepper. Mmm.

I don't think I've ever tried these with corn meal. The girls are home from school tomorrow. Will give it a try for lunch.
(Picky little things actually like salmon patties! Go figure..)

Gem!
I did this recipe tonight with homemade mac & cheese, and Gary loved it. Abby didn't try it, she looked at it like it would bite her. Eh, two year olds. Once again, you came to the "what to cook for dinner" rescue. You are the BOMB! ~Shea~

Just made these with fish fry instead of corn meal. added chopped chili peppers (mild), red bell pepper, and onion. My wife loved them, as did I. Good Stuff!
