How to make it

  • Preheat oven to 375
  • Squish together all the ingredients for the meatloaf (you'll have to get your hands dirty for this one). Place in a 8x11 baking dish and form the loaf so it doesn't touch the sides of the dish.
  • Mix together the ingredients for the topping. It should have the consistency of a thick barbecue sauce. Pour on top of meatloaf.
  • Bake for 45 minutes, or until the internal temperature hits 170. You can form these into smaller, individual loaves for a shorter cooking time.
  • Remove from oven and let it rest, covered, for at least 10 minutes before serving. Don't worry, it will be plenty hot.

    DH thinks corn chips are veggies (in fact sometimes I refer to him as that...) I love anything I can sneak veggies into!
