Sneaky BBQ Meatloaf Recipe
While this meatloaf definitely doesn't qualify as healthy, it does have the added nutrients of spinach and is super delicious. This meatloaf is nice and moist, and the crust on top adds a nice sticky layer of texture and flavor.

Ingredients
  • For Meatloaf:
  • 2 lbs ground beef*
  • 1 (8 oz.) package frozen spinach, thawed
  • 2 eggs
  • 1 cup bread crumbs
  • 3 tbs Worcestershire sauce (or soy)
  • 1 tbs cumin
  • 1 tbs paprika
  • salt and pepper to taste
  • *Note* If you use a high fat ground beef, you'll need to drain out a lot of liquid during cooking. The leaner meats will have less liquid, but still be tender.
  • For topping:
  • 1/4 c ketchup
  • 1/4 cup brown sugar
  • 1 tbs Worcestershire sauce
  • 1 tsp cumin
  • 1 tsp paprika

Directions
  1. Preheat oven to 375
  2. Squish together all the ingredients for the meatloaf (you'll have to get your hands dirty for this one). Place in a 8x11 baking dish and form the loaf so it doesn't touch the sides of the dish.
  3. Mix together the ingredients for the topping. It should have the consistency of a thick barbecue sauce. Pour on top of meatloaf.
  4. Bake for 45 minutes, or until the internal temperature hits 170. You can form these into smaller, individual loaves for a shorter cooking time.
  5. Remove from oven and let it rest, covered, for at least 10 minutes before serving. Don't worry, it will be plenty hot.
