Sneaky BBQ Meatloaf

- For Meatloaf: shopping list
- 2 lbs ground beef* shopping list
- 1 (8 oz.) package frozen spinach, thawed shopping list
- 2 eggs shopping list
- 1 cup bread crumbs shopping list
- 3 tbs worcestershire sauce (or soy) shopping list
- 1 tbs cumin shopping list
- 1 tbs paprika shopping list
- salt and pepper to taste shopping list
- *Note* If you use a high fat ground beef, you'll need to drain out a lot of liquid during cooking. The leaner meats will have less liquid, but still be tender. shopping list
- For topping: shopping list
- 1/4 c ketchup shopping list
- 1/4 cup brown sugar shopping list
- 1 tbs worcestershire sauce shopping list
- 1 tsp cumin shopping list
- 1 tsp paprika shopping list
How to make it
- Preheat oven to 375
- Squish together all the ingredients for the meatloaf (you'll have to get your hands dirty for this one). Place in a 8x11 baking dish and form the loaf so it doesn't touch the sides of the dish.
- Mix together the ingredients for the topping. It should have the consistency of a thick barbecue sauce. Pour on top of meatloaf.
- Bake for 45 minutes, or until the internal temperature hits 170. You can form these into smaller, individual loaves for a shorter cooking time.
- Remove from oven and let it rest, covered, for at least 10 minutes before serving. Don't worry, it will be plenty hot.
