A little bit fussy preparation for the cake portion, but a little bit of care makes all the difference in the presentation. One from Grandma Robert's files. She was a prolific baker.

Ingredients
  • 1 3/4 cups of bisquick
  • 1 tbsp of sugar
  • 1/4 cup milk
  • 1 slightly beaten egg
  • 1/2 cup butter
  • #2 can of Pineapple chunks
  • 2 tsp of cornstarch
  • 2 tbsp of brown sugar
  • 1/4 cup of water
  • 1 tsp of grated orange rind

Directions
  1. Combine bisquick with sugar in mixing bowl.
  2. Add milk, egg and 2 tbsp of butter.
  3. Stir until dry ingredients are mixed.
  4. Turn out on lightly floured board, knead gently a few times.
  5. Roll into an 6 x 12 rectangle.
  6. Cut in half lengthwise.
  7. Brush one strip with butter and top with the other strip sandwich fashion.
  8. Cut into four 3 inch pieces.
  9. Place on baking sheet and bake 450 degrees for 10-12 minutes until lightly browned.
  10. meanwhile drain pineapple chunks, saving syrup.
  11. Combine brown sugar, and corn starch in sauce pan, slowly stir in pineapple syrup and water.
  12. Place over moderate heat and bring to a boil, stirring constantly.
  13. boil until clear 2 to 3 minutes. Partially cool, add pineapple chunks, cut in half and orange rind.
  14. Serve between and on top of shortcake squares.
