Pineapple Shortcake Squares

- 1 3/4 cups of Bisquick shopping list
- 1 tbsp of sugar shopping list
- 1/4 cup milk shopping list
- 1 slightly beaten egg shopping list
- 1/2 cup butter shopping list
- #2 can of pineapple chunks shopping list
- 2 tsp of cornstarch shopping list
- 2 tbsp of brown sugar shopping list
- 1/4 cup of water shopping list
- 1 tsp of grated orange rind shopping list
How to make it
- Combine bisquick with sugar in mixing bowl.
- Add milk, egg and 2 tbsp of butter.
- Stir until dry ingredients are mixed.
- Turn out on lightly floured board, knead gently a few times.
- Roll into an 6 x 12 rectangle.
- Cut in half lengthwise.
- Brush one strip with butter and top with the other strip sandwich fashion.
- Cut into four 3 inch pieces.
- Place on baking sheet and bake 450 degrees for 10-12 minutes until lightly browned.
- meanwhile drain pineapple chunks, saving syrup.
- Combine brown sugar, and corn starch in sauce pan, slowly stir in pineapple syrup and water.
- Place over moderate heat and bring to a boil, stirring constantly.
- boil until clear 2 to 3 minutes. Partially cool, add pineapple chunks, cut in half and orange rind.
- Serve between and on top of shortcake squares.
