St Louis Spinach Bites Recipe
A wonderful way to eat spinach. I've used this as an appetizer or as the side dish.

Ingredients
  • 2 pkg frozen chopped spinach
  • 2 cups seasoned bread stuffing (Pepperidge Farm)
  • 1 cup parmesan cheese
  • 3/4 cup butter
  • 6 eggs beaten
  • salt and pepper to taste

Directions
  1. Cook spinach according to directions on pkg. Drain well.
  2. Mix all in the order given.
  3. Shape into bite size balls.
  4. Place on greased cooking sheet and bake at 350 degrees for 10 minutes.
  5. These can be cooked then frozen and reheated when needed. I freeze these on a cookie sheet then drop them into a freezer bag.
