Ozark Pie Recipe
Called a pie but makes a great coffeecake. I've served it as both. This is one of my students' favorite. Kids like it served with cool whip. Adults like the topping listed below.

Ingredients
  • 1 egg
  • 3/4 cup sugar
  • 3/4 cup flour
  • pinch of salt
  • 1 1/4 tsp. baking powder
  • 1 cup unpeeled diced apples
  • 1 cup chopped walnuts
  • 1 tsp. vanilla
  • coolwhip
  • applesauce

Directions
  1. Beat egg, stir in sugar.
  2. Add dry ingredients. Stir until just mixed.
  3. Add remaining ingredients. Mix again until just mixed. (very dry looking at this point - no worries)
  4. Pour into greased pie pan
  5. Bake at 350 degrees for 30 to 35 minutes.
  6. Serve with whipped cream or cool whip mixed with applesauce to taste OR simply dust the pie with powdered sugar.

I know by the ingredients that this can be made with a wheat free flour mixture with no other adjustments - sounds very good!


I will serve it warm as a pudding.....as it is winter in South Africa ......Brrrr love the weather and the recipe ...........:}
