Absolute Mexican Cornbread

- 1 stick of butter or 1/4 cup, melted shopping list
- 1/3 cup white sugar shopping list
- 4 eggs shopping list
- 1 (15 ounce) can cream-style corn shopping list
- 1 can(4 ounce) can chopped green chile peppers, drained shopping list
- 1/2 cup shredded monterey jack cheese shopping list
- 1/2 cup shredded cheddar cheese shopping list
- or use 1 cup of shredded pepper Jack cheese shopping list
- 1 cup all-purpose flour shopping list
- 1 cup yellow cornmeal shopping list
- 4 teaspoons baking powder shopping list
- 1/4 teaspoon salt shopping list
- cayenne pepper to taste shopping list
How to make it
- Preheat oven to 300 degrees F (150 degrees C). Lightly grease a 9x13 inch baking dish.
- In a large bowl, beat together butter and sugar. Beat in eggs one at a time. Blend in cream corn, chiles, Monterey Jack and Cheddar cheese.
- In a separate bowl, stir together flour, cornmeal, baking powder and salt. Add flour mixture to corn mixture; stir until smooth. Pour batter into prepared pan.
- Bake in preheated oven for 45 min, until a toothpick inserted into center of the pan comes out clean.

Awesome cornbread..anything with green chiles in it is terrific to me. When I lived in NM,I put green chiles on everything. My favorite was green chile cheese burgers.
